Egg Mousse

A mousse is a prepared food that incorporates air bubbles to give it a light and airy texture. It can range from light and fluffy to creamy and thick, depending on preparation techniques. A mousse may be sweet or savory. Dessert mousses are typically made with whipped egg whites or whipped cream, and generally flavored with chocolate or puréed fruit. (Wikipedia)

 

 

Ingredients:

  • 6 Eggs — hard-boiled
  • 5 ounces Chicken stock
  • 1 teaspoon Gelatin
  • 1 cup cream — whipped
  • 1 tablespoon Worcestershire sauce
  • Paprika
  • 2 teaspoons Anchovy essence
  • Salt
Steps:
  • Finely chop the egg whites.  Sieve the egg yolks. Add gelatine to chicken stock and heat until it dissolves.
  • Cool and allow mixture to begin to set. Put stock and seasoning into whipped cream.
  • Fold in yolks and whites, place in dish and chill. Decorate and serve.

Egg Pancake Rolls with Pork Filling

 

A pancake is a thin, flat, round cake prepared from a batter and cooked on a hot griddle or frying pan. Some pancakes are quick breads, which use a quick leavening agent such as baking powder, while some use a yeast-raised or fermented batter. They may be served at any time with a variety of toppings or fillings including jam, chocolate chips, fruit, syrup or meat such as pork. (Wikipedia)

 

Ingredients:

  • 4 Eggs
  • 1 tablespoon    Dry sherry
  • Carrots — finely chopped (for garnish)

 

Filling:

  • 1 cup (about 1/2 lb) ground pork, uncooked
  • 2 medium Fresh mushrooms chopped fine
  • 2 Scallions — chopped fine (white parts separate from the green)
  • 2 teaspoons Cornstarch — dissolved in
  • 2 tablespoons Water — cold
  • 1/2 tablespoon Dark soy sauce
  • 1 tablespoon Dry sherry
  • 1 teaspoon Salt
  • 1 tablespoon Peanut oil

Sauce:

  • 2      tablespoons Oyster sauce
  • 1      tablespoon Light soy sauce
  • 1      tablespoon Plum sauce
  • Dash hot chili oil or Tabasco Sauce
Steps:
  • In a bowl, stir the eggs with the dry sherry. In a mixing bowl, combine all the filling ingredients, include only the white parts of the chopped scallions (save the green parts for garnish) and stir to blend well.
  • In a 8-inch skillet, heat the oil lightly.  Pour about a quarter of the egg mixture to cover the bottom of the skillet.  Heat until the egg pancake has barely set, then transfer to a plate.
  • Make 3 more pancakes. Divide the filling into 4 portions and put a portions on each pancake. Moisten your fingers with cold water and spread the filling mixture evenly over the surface of the pancake, then roll up tightly, as you would a jelly roll.
  • Seal with a little leftover egg from the egg-beating bowl.  Place the rolls on a flat plate that will fit your steamer, and then steam them over an inch of simmering water for 15 minutes.
  • In a bowl, mix together the sauce ingredients.  To serve, cut the rolls into slices, cutting on the slant. Drizzle the sauce over them and top with the scallion greens and the carrots.

 

Makes 6 to 8 appetizer servings.

Shrimp Filled Deviled Eggs

Deviled eggs or eggs mimosa are hard-boiled eggs, shelled, cut in half and filled with the hard-boiled egg's yolk mixed with other ingredients such as mayonnaise and mustard, but many other variants exist internationally. Deviled eggs are usually served cold. They are served as a side dish, appetizer or a main course, and are a common holiday or party food.

Contemporary versions of deviled eggs tend to include a wider range of seasonings and added foods, such as garlic, horseradish, wasabi, sliced Jalapeño pepper, cheese, chutney, capers, salsa, hot sauce, ham, mushrooms, spinach, sour cream, caviar, smoked salmon or other seafood, and sardines and may not be spicy. (Wikipedia)

 

Ingredients:

  • 6 hard-boiled eggs
  • 1/4 cup Miracle Whip
  • 1 teaspoon French's mustard
  • dash Tabasco sauce
  • salt, to taste
  • 1/4 tsp. garlic powder
  • 6 medium cooked shrimp, finely chopped
  • 2 green onions, finely chopped

 

Steps:

  • Cut peeled eggs lengthwise into halves. Slip out yolks; mash with fork.
  • Stir in Miracle Whip, mustard, Tabasco, garlic powder and salt; taste and adjust seasonings.
  • Stir in shrimp and minced green onions. Fill whites with egg yolk mixture, forming a slightly rounded top, or pipe through a decorative pastry bag or cookie shooter.
  • Arrange on a serving dish. Cover tightly and refrigerate.
  • Garnish with paprika and chopped fresh parsley before serving, if desired.

Yields 12 deviled eggs.

Chinese Egg Rolls

Egg roles are a large variety of filled, rolled appetizers. The kind of wrapper, fillings, and cooking technique used, as well as the name, vary considerably within this large area.

In American Chinese cuisine, an egg roll is a savory dish typically served as an appetizer. It is usually stuffed with chicken, pork or shrimp, cabbage, carrots, bean sprouts and other vegetables, and then deep fried. (Wikipedia)

 

Ingredients:

  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 mashed garlic cloves
  • juice from 1/4 lemon
  • 1 quartered roasting chicken
  • 2 lb lean pork tenderloin
  • 3 tablespoons vegetable oil
  • 1 finely sliced celery stalk
  • 1 small head cabbage finely diced
  • 3 large onions, finely diced
  • 1 pkg (8-oz) finely diced fresh mushrooms
  • soy sauce to taste
  • salt and pepper
  • 1 lb bean sprouts thoroughly cleaned
  • egg roll wrappers
  • 1 lightly beaten egg white
  • vegetable oil for frying

Dipping Sauce:

  • 1/2 cup soy sauce
  • 1 teaspoon dry mustard
  • 2 teaspoons garlic powder
  • 1 teaspoon vinegar
  • 1 teaspoon brown sugar

 

Steps:

  • Mix together, soy sauce, water, garlic and lemon juice. Add the chicken and pork. Cover tightly and marinate overnight.
  • Roast the chicken and the pork together in a 350 degree oven until done. The chicken should be cooked in about 1 hour. The pork takes about an hour and a half. When cool, cut into matchstick pieces and set aside.
  • Meanwhile, in a wok, or deep sided frying pan, heat the oil on medium heat. Stir in the celery, cabbage, onions and mushrooms. Stir fry until celery and onions are tender. Add chicken and pork. Stir until heated through. Add soy sauce, salt and pepper to taste. Remove from heat and stir in the bean sprouts.
  • When working with egg roll wrappers, be sure to cover them with a damp cloth to prevent them from drying out. To fill each roll, mound about 2 heaping tablespoons of filling just below the center of the egg roll. Fold bottom corner up over filling to cover, then fold in the two outside corners.
  • Roll closed, sealing shut with a bit of egg white. Put oil in a wok or large pan to a depth of about 2 inches – deep enough to cover the egg rolls. Over medium-high heat, warm the oil and carefully add the egg rolls, one at a time. Deep fry about 2-3 minutes, until golden brown on both sides, turning once. May be kept warm in 200 degree oven until serving time. Serve with dipping sauce.

 

DIPPING SAUCE: Combine soy sauce, mustard, garlic powder, vinegar and brown sugar.

NOTE: Egg rolls may be frozen after frying and cooled. Reheat in oven to serve.

Caliente Cheese And Egg Brunch Dish

Cheese and egg

Brunch is eaten between breakfast and lunch, and is a substitute for both these meals. Brunch is eaten in the late morning. The word is a portmanteau of breakfast and lunch. The meal usually involves standard breakfast foods such as eggs, sausages, bacon, ham, fruits, pastries, pancakes, and the like.

Oven baked Caliente cheese and egg is a perfect brunch meal. Give this recipe a try!

 

 

Ingredients:

  • 8 eggs
  • 1 teaspoon Tabasco sauce
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups Monterey jack cheese — shredded
  • 1 1/2 cups cheddar cheese — shredded
  • 1/3  cup green bell peppers — minced
  • 2 tablespoons black olives — sliced
  • 2 tablespoons green chiles — chopped

 

Steps:

1. Lightly grease a 9-inch square pan. Heat oven to 375 degrees.

2. Combine eggs and Tabasco sauce in a mixing bowl. Use high speed on mixer to beat until light and fluffy, about 5 minutes.

3. Add flour, baking powder and salt. Mix well then stir in cheeses, green pepper, olives and green chiles.

4. Pour into prepared pan and bake 20-25 minutes. Let stand 5 minutes before serving. Cut into 36 pieces for appetizer or into larger portions for serving with a spicy tomato sauce or salsa.

 

* This will make 36 appetizers or about 8 brunch-sized servings.
