Mint Chocolate Freezer Ice Cream Cups

 

Mint chocolate is a popular variety of flavored chocolate, made by adding a mint flavoring, such as peppermint, spearmint, or crème de menthe, to plain chocolate. Mint chocolate can be found in a wide variety of edible products, such as candy, mints, cookies, the beverage hot chocolate, and mint chocolate chip ice cream. (Wikipedia)

 

Serves: One
Effort: Easy

 

 

Ingredients:

  • 1 cup whipping cream
  • 1 teaspoon mint extract
  • 3 teaspoons Carnation Fat
  • Free Hot Cocoa mix

 

How to Prepare:

  • Whip cream until frothy, but before it forms stiff peaks.
  • Add extract and cocoa mix until blended.
  • Spoon into paper cupcake cups.
  • Ready tupperware container. Seal container and freeze until solid.
  • Take cups out of freezer and serve.

 

*No sweetener needed, plenty in the cocoa mix.

Quickie Ice Cream

Ice cream is a frozen dessert usually made from dairy products, such as milk and cream, and often combined with fruits or other ingredients and flavors. Ice cream was made by hand in a large bowl placed inside a tub filled with ice and salt. This was called the pot-freezer method.  In the pot-freezer method, the temperature of the ingredients is reduced by the mixture of crushed ice and salt. The salt water is cooled by the ice, and the action of the salt on the ice causes it to (partially) melt. (Wikipedia)

 

Ingredients:

  • 1/2 cup heavy cream
  • 1/3 cup water
  • 2 packages artificial sweetener
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon syrup of your choice(or extract)

 

How to Prepare:

  • Place ingredients in a small ziploc and seal well.
  • Place inside a gallon sized ziploc with ice and salt.
  • Set bag on a towel beside you on the couch and flip and jiggle the bag around for about 15 minutes, until set.

Fruit Ice Cream

Fruit ice cream is a frozen dessert usually made from dairy products, such as milk and cream, and often combined with fruits.

There are some frozen desserts that also have fruits with them. Examples of these are the: (1) Halo-halo,  a popular Filipino dessert that is a mixture of shaved ice and milk to which are added various boiled sweet beans and fruits; (2) Sorbet: fruit puree with no dairy products; and (3) Popsicle: frozen fruit puree or fruit juice on a stick or in a flexible plastic sleeve. Ingredients:

  • 1 cup frozen unsweetened strawberries, raspberries, mangoes, blueberries
  • 1/4 cup heavy whipping cream
  • 1 teaspoon liquid stevia — to taste

How to Prepare:

  • Place ingredients in blender.
  • Blend till smooth, soft serve consistency.

 

*Does not refreeze well. It will be hard as a rock if you refreeze.

Almost Maple Walnut Ice Cream

Walnuts are one of the several high nutrient density foods. 100 grams of walnuts contain 15.2 gram protein, 65.2 gram fat, and 6.7 gram dietary fiber. The protein in walnuts provides many essential amino acids. Walnuts, like other tree nuts, must be processed and stored properly.

On the other hand, the Sugar maple is tapped for sap, which is then boiled to produce maple syrup or made into maple sugar or maple taffy. (Wikipedia)

Ingredients:

  • 1 Cup Plain Yogurt
  • 1/8 Cup Howard's Low Carb Maple Syrup
  • 1/8 Cup Chopped Walnuts

 

How to Prepare:

  • Mix ingredients together and put in freezer.
  • Stir every 15 minutes until ice cream like

Ice Cream Cookies

Ice Cream cookies have slight similarities with the dessert Silvana. A Silvana is a crunchy, creamy, frozen cookie made up of a layer of buttercream sandwiched between two cashew-meringue wafers, and coated with cookie crumbs. They are usually in the form of a round disc. (Wikipedia)

 

Serves: 20 cookies
Prep Time: 5 mins 1 hour to freeze

 

Ingredients:

  • 1 cup heavy cream
  • 3 drops Stevia or 3 splenda packets
  • 2 tbsp Natural Peanut butter
  • 4 oz Softened Cream Cheese
  • 1 tbsp Atkins Choc Syrup (optional)

 

How to Prepare:

  • Whip cream & sweetener with a hand beater until its like cool whip texture.
  • Add all the other ingredients and beat until well mixed. Taste for sweetness; adjust if you want.
  • Using a spoon put big globs on a non stick cookie sheet or in an ice cube tray and freeze until firm.
  • Pry them off the cookie sheet with a knife and store  in a plastic bag.

 

*Hard to get out of an ice tray but they come off the cookie sheets real easy.
*Taste like peanut butter cup ice cream!
