Chocolate Chip Muffins

A muffin is an American English name for a type of semi-sweet cake or quick bread that is baked and generally single-serving. They are similar to cupcakes, although they are usually less sweet and lack frosting. They may have sweet fillings, such as chocolate, toffee, lemons, or blueberries. Savory varieties, such as cornbread muffins or cheese muffins or sometimes just plain muffins, also exist. (Wikipedia)

 

 

Ingredients:

  • 3/4 c Milk
  • 1/4 c Butter, melted
  • 1 Egg
  • 1 3/4 c Flour, all-purpose
  • 1/3 c Brown sugar, packed
  • 2 1/2 ts Baking powder
  • 3/4 ts Salt
  • 1/2 c Chocolate chips, semisweet
  • 1/2 c Walnuts, chopped
How to Prepare:
  • Heat oven to 400 degrees F.; line 12 medium muffin cups with paper baking cups or grease bottoms only of muffin cups.
  • Beat milk, margarine and egg. Stir in remaining ingredients, all at once, just until flour is moistened (batter will be lumpy).
  • Fill muffin cups about 2/3 full.
  • Bake 18 to 20 minutes or until golden brown.

Rich chocolate brownies

A chocolate brownie is a flat, baked square or bar developed in the United States. Brownies come in a variety of forms. They are either fudgy or cakey, depending on their density, and they may include nuts, frosting, whipped cream, chocolate chips, or other ingredients. A variation that is made with brown sugar and no chocolate is called a blondie. (Wikipedia)

 

 

Ingredients:

  • 3/4 cups flour
  • 1/4 t. salt
  • 1 1/2 squares unsweetened chocolate
  • 1/2 c. margarine or butter
  • 2 eggs
  • 1 cup sugar
  • 1 t. vanilla
  • 1 ripe banana, well mashed
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup broken walnut meats

*No baking powder or soda. This makes them extra dense and moist.

How to Prepare:

  • Preheat oven to 350 F, (325 for a glass pan). Combine flour and  salt in a small bowl. Set aside.
  • Melt margarine or butter and  unsweetened chocolate in a small pan on low heat. Cool to room  temperature.
  • In a large bowl, beat eggs, sugar and vanilla. Add  mashed banana. Stir in chocolate mixture. Gradually sift and  stir in flour mixture. Add chocolate chips and walnuts.
  • Pour  into an 8″x 8″ pan that has been sprayed with Pam or cooking  oil.
  • Bake for 30 to 35 minutes.

Rich Chocolate Mousse

A mousse is a prepared food that incorporates air bubbles to give it a light and airy texture. It can range from light and fluffy to creamy and thick, depending on preparation techniques. A mousse may be sweet or savory. Dessert mousses are typically made with whipped egg whites or whipped cream, and generally flavored with chocolate or puréed fruit. (Wikipedia)

 

 

 

Ingredients:

  • 8 oz Semisweet chocolate
  • 3 tb Powdered sugar
  • 3 tb Hot strong coffee
  • 3 Egg yolks
  • 8 oz Frozen whipped topping; Thawed, divided
How to Prepare:
  • In a double boiler over simmering water, melt chocolate.
  • Remove top pan from heat; stir in sugar and coffee.
  • Add one yolk at a time, stirring until smooth.
  • Place top pan over boiling water; cook and stir for 3-4 minutes or until thick.
  • Pour into bowl; chill 6-8 minutes.Fold in 3 cups whipped topping. spoon into dishes. Top with whipped topping.

Chocolate Truffles

A chocolate truffle is a type of chocolate confectionery, traditionally made with a chocolate ganache center coated in chocolate or cocoa powder, usually in a spherical, conical, or curved shape. Other fillings may replace the ganache: cream, melted chocolate, caramel, nuts, almonds, berries, or other assorted sweet fruits, nougat, fudge, or toffee, mint, chocolate chips, marshmallow, and, popularly, liqueur. Serves: 3 dozen truffles

 

Ingredients:

  • ½ Cup unsalted butter
  • 2 1/3 C confectioner’s sugar
  • ½ C cocoa
  • 1/4 cup heavy or whipping cream 1 1/2 teaspoon vanilla

*Centers: pecan, walnuts, whole almonds or after-dinner mints

*Coatings: coconut, crushed nuts,confectioners sugar

 

How to Prepare:

  • Cream butter in large mixer bowl.
  • Combine 2 1/2 cups confectioners' sugar and the cocoa; add alternately with cream and vanilla to butter.
  • Blend well. Chill until firm. Shape small amount of mixture around desired center; roll into 1 inch balls.
  • Drop into desired coating and turn until well covered. Chill until firm.

Black Forest Cheesecake

Typically, Black Forest cake consists of several layers of chocolate cake, with whipped cream and cherries between each layer. Then the cake is decorated with additional whipped cream, maraschino cherries, and chocolate shavings. In some European traditions sour cherries are used both between the layers and for decorating the top. (Wikipedia)

 

 

Ingredients:

  • 1 c Chocolate Wafer Crumbs
  • 3 tb Margarine, Melted
  • 16 oz Cream Cheese Softened
  • 2/3 c Sugar
  • 2 Large Eggs
  • 6 oz Semi-sweet Chocolate Chips, melted
  • 1/4 ts Almond Extract
  • 21 oz Cherry Pie Filling (1 Cn)
  • Frozen Whipped Topping Thawed
How to Prepare:
  • Combine crumbs and margarine, press onto bottom of 9-inch springform pan. Bake at 350 degrees F., 10 minutes.
  • Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended.
  • Add eggs, one at a time, mixing well after each addition. Blend in chocolate and extract; pour over crust.
  • Bake at 350 degrees F., 45 minutes. Loosen cake from rim of pan; cool before removing rim of pan.
  • Chill. Top cheesecake with pie filling and whipped topping just before serving.
